Appalachia Cookie Company is a small cookie shop in downtown Boone where the cookies are baked fresh to order. It's a simple concept done really well — you pick from a case of around 20 varieties, and about 15 to 20 minutes later you get a warm, gooey cookie straight out of the oven.

The selection is genuinely impressive. Flavors range from the classics (chocolate chip, snickerdoodle, oatmeal raisin) to the more adventurous — think Reese's Peanut Butter Cup, s'mores, caramel churro, Mexican hot chocolate, Lucky Charms, and Teddy Graham. My favorite (so far) is the Reese’s Peanut Butter Buckeye (above). Prices are reasonable. Cookies come in three categories: “regular” ($4), “premium” ($5) and “not-so-secret” ($6.50).
The pro move is to order ahead online. The cookies are baked to order, which means if you walk in, you're waiting. Skip the wait by ordering on their website and timing your arrival — you'll walk in, pick up a warm box, and be on your way. The shop is small with a few tables, so it can get tight inside.
Beyond cookies, they've got a full drinks menu — espresso, lattes, cold brew, hot chocolate, and an array of flavored milks including cinnamon sugar and strawberry. They also serve ice cream and other baked goods if cookies aren't your thing (though they should be).

It's a great stop after dinner or lunch somewhere in downtown Boone, or as a mid-afternoon treat. The cookies come out thick, soft, and genuinely exceptional.
